Geoff and I went to the cutest restaurant the other night called Sycamore. It’s located in Newton Center, just outside of the city. It had the best ambiance and just felt so cozy. We both said it would be the perfect spot to come back to in late fall or the winter. We were both super happy because we got a table where we could both sit on the cushion. Anyone else fight with their significant other over who gets the regular chair and who gets the couch-chair in a restaurant?! Lol…. Maybe it’s only us!
Anyway, they had this delicious salad that we ordered as an appetizer, and I knew that I had to try recreating it at home. It had the freshest, crunchy sugar snap peas, strawberries, pistachios, feta, basil, and the slightest bit of mint. Refreshingly light, flavorful, and a salad that’s out of the ordinary. Just my style. I’m not normally much of a feta girl, but since working in restaurants, I know that chefs formulate recipes based on how flavors pair together. I really try to not mess with their vision and to appreciate their art (yes food is an art 😉 ). But I will say that the feta Many who know me know that I truly love to cook and I love attempting to recreate meals I fall in love with that I’ve eaten out. Summer Strawberry, Pistachio, Snap Pea Salad Recipe (for 2)
3 Cups of Sugar Snap Peas
1/2 cup of pistachios (before they’re shelled, or 1/4 cup already taken out of the shell)
1 cup of strawberries, chopped
3 Tablespoons of feta
1 Tablespoon of olive oil
1/4 cup of fresh basil, chopped
1 Tablespoon of mint, chopped
Salt and Pepper to taste
Start by rinsing sugar snap peas and cutting off stems. Chop some lengthwise, others width-wise and place into large bowl. Cut up strawberries to desired size for salad. Take pistachios out of shells (no need to chop pistachios unless desired). Add 3 Tablespoons of feta cheese. Add 1 Tablespoon of olive oil and mix salad. Chop basil and mint and add to salad. Add salt and pepper to taste. Cover and put in the fridge until it’s time for you to enjoy it!
