Whether you need a fun cocktail recipe for a Galentine’s Day night with the ladies, you’re looking to beat the summer heat with a buzz, or need a cocktail idea for a brunch, this Popsicles & Prosecco cocktail recipe has you covered. With fruity popsicles and prosecco or champagne, it’s sure to be a crowd pleaser.

Popsicles and Prosecco
A place I’ve been dying to go for a while now is Loopy Doopy Rooftop Bar in NYC, which is located on the 16th floor of the Conrad New York hotel. You guys have to have seen their fun cocktails all over social media, and if you’re unsure, it’s the popsicle and prosecco cocktails that we’ve all swooned over at some point or another!
Since I won’t be making it to NYC for a little while, I thought it would be so much fun to make these at home as a fun, summer cocktail! I couldn’t help but think that they would make the perfect addition to a girls night, summer brunch, or Valentine’s Day with your ladies. I also think that if you substituted the prosecco with ginger ale or Sprite, it would be perfect for a summer treat for kiddos!
Directions:
1. Take the wrapper off the popsicle flavor of your choosing and place popsicle-side-down in a wine glass (I chose strawberry).
2. Pour prosecco (or champagne) over the top (Note: If you don’t like sparkling wine, you could still use a regular wine of your choosing).
3. Sip Guzzle!
Note: Do not make until you’re ready to enjoy these cocktails because they melt fast!! I also suggest having straws on hand so that you can easily sip your drink without the popsicle stick getting in your face.
